I use Audacity, though I do live recording stuff. It's a multi-track recording and editing program, not really a composer.
Ardour http://ardour.org/ is basically the same thing, though has features to do time sync for video integration and it's only available for Linux or Mac OS X.
I used Rosegarden for a while before I switched to Audacity and it does have a composer and MIDI features. Though it's only available for Linux last I knew.
